ORGINATION OF THE WORD
"SPOSTA"

Who Knows? I would imagine it's real close to the beginning of the English language. I noticed its prevalence just a few years into living in Steamboat. Over the years, I've come to the realization that  the word "sposta" might just be the most used word in the English language. Example = "hey man, did you hear it's sposta snow tomorrow?" The proper response, "I heard were sposta get 18 inches overnight!" The funny thing to me is, why we keep using the word "sposta" when it almost never does what it's sposta do? The best I can come up with is that "sposta" is just simply fun to say. And so born is the name of Spostas, where it is not only sposta be good, it's delicious. 
THE PRODUCTS WE USE
AND WHY


Rice -
     The rice we use is the biggest difference between Spostas and the rest of the sushi
world. Most of the typical or traditional restaurants that serve sushi use a white short grain variety. White rice is created by removing the husk and the bran and aggressively polishing the grain. Then the grain is coated with talc or gluten Since white rice is polished so aggressively, it loses much of its nutrients in the process. Spostas World Sushi uses  a medium grain calrose variety. This particular variety of rice has its husk removed then is lightly polished leaving behind much of the inherent quality, flavor and nutrients  of the rice. Our rice is not at all coated with a talc or worse, gluten. The moral of the story is that Spostas Sushi rice is great for you and tastes delicious.

Fish -
    Spostas World Sushi uses only the best quality, flash frozen product on the market. The fish is processed within 24 hours of being caught and in most casses its done within 12 hours. After being cut down  and cleaned, the fish is put into a special freezer that freezes the product solid in 45 seconds. This quick freezing process allows the water inside the fish to freeze solid without ice crystals forming and damaging cells, causing a mushy product. We get all of our fish products shipped to us frozen. Having product that is frozen enables us to slowly thaw the fish over a 36 hour period. This is the safest and freshest fish you can get in Steamboat Springs, Colorado.
      Our tuna is caught in Indonesia and our Alaskan King Salmon is wild caught, never eat a farm raised salmon raw especially if its never been frozen.

Vegetables -
     With the exception of the asparagus and edemame  which are boiled, all other vegetables are fresh and raw with no seasonings or preservatives.
